COOKED BANANA PUDDING

COOKED BANANA PUDDING 
2 c. sugar
8 tbsp. flour
4 c. milk
3 eggs, separated
1 tsp. vanilla
2 tbsp. butter
4 ripe bananas
12 oz. pkg. vanilla wafers
Mix sugar, flour, and enough milk to make a thick paste. Add egg yolks. Beat well - add remaining milk stirring as milk is added. Cook in double boiler until thick, remove from fire and add vanilla and butter. Mix well.Place layer of wafers in bottom of baking pan or dish. Cover with sliced bananas, then cover with pudding. Repeat until all of pudding is used. Cover with meringue and bake at 350 degrees for 10 minutes until brown.
MERINGUE:
2 tbsp. sugar
1/2 c. water
1 tbsp. cornstarch
Mix and boil until clear and thick. Set aside until cool. Beat 3 egg whites until stiff peaks form, add 1/8 teaspoon salt and 6 tablespoons sugar, gradually beating slowly until mixed well. Add cooled cornstarch mixture. Continue beating until stiff peaks form. Bake at 350 degrees for 10 minutes or until brown.
